March 14th, 2010 by MikeI’ve tried several variations of Cole Slaw and have never been totally satisfied. They have been kinda bland or called for mayo. However, I finally found a recipe that is quite good. This came from our latest Abundant Harvest Organics “newsletter”.
Ingredients
- 1 head green cabbage
- 1/4 head read cabbage (optional)
- 1 carrot, shredded
- 1/2 cup onion, chopped
- 2 1/2 tsp lemon juice
- 1/2 cup cider vinegar
- 3 tbsp white sugar
- 1/2 tsp salt
- 1/4 tsp freshly ground pepper
- 1/2 cup vegetable oil replace with extra virgin olive oil! use less than 1/2 cup
- spicy brown mustard to taste
Instructions
- Combine vinegar, surgar, salt, pepper, lemon, juice, oil, and optional mustard to make dressing
- In large bowl, combine dressing with veggies
- Let sit for at least 3 hours – I let mine sit overnight
Notes
- I love brown mustard in my cole slaw, but it is totally optional
- I can’t imagine not using olive oil, but I guess you could use vegetable oil. Also 1/2 cup seems like a lot… I used less

January 9th, 2010 by Mike- You can re-wear dirty clothes, but you can’t re-use dead batteries.
- Washing dirty clothes makes them clean; washing dead batteries makes them deader.
- New clothes are cheaper than new laptop batteries.
- I’d rather be caught naked than without my cellphone.
- Clothes may keep me warm, but they can’t find me shelter.
- I can find inexpensive, delicious food with my cellphone. Can’t say the same about clean clothes.
- Clean clothes won’t help me find my colleagues, but a charged cellphone will.
